Chili with Butternut Squash and Swiss Chard

It’s officially cold!!  Time for big pots of slow-cooking, yummy goodness.  Like a big bowl of chili!  The chili I make these days has come a long way from when I first started cooking.  Back in the day, it had big chunks of meat in it.  Then I switched to ground turkey because everyone said it’s much better for you; lower in fat, leaner protein…but I had not yet learned about what conventional turkeys are fed and the ridiculous amount of GMOs in these little birds.  Today?  Today I make chili with beans and veggies.   Why did it take me so long to figure this out?  Everyone in the family eats it all up, and we don’t miss the meat!  And hopefully, neither will you!

Pumpkin Spice Ice Cream (Dairy Free)

SLOW DOWN!!!!  Time is going too fast!  I remember being in the 3rd grade watching the clock tick tock, tick tock, tick tock.  It seemed like an eternity until recess!  My Mom said  ”the older you get the faster time will go.”  It’s so true!  I can’t believe it’s almost Thanksgiving!  And I’ve hardly had any pumpkin yet this Fall!  My husband, not a pumpkin lover, would beg to differ.  Well, there is still time for some great pumpkin dishes to be enjoyed!  Sorry, honey!  Today I’ve got a great sweet treat!  Pumpkin Spice Ice Cream that is ready in just a few minutes!  Oh and it’s dairy free for all of you that don’t play well with with milk products.  And it’s pretty much fat free.  So go ahead, overdo it on this ice cream!

How to make Organic Butter

Something happened the other day in my kitchen.  It was kind of magical.  It all started with a leftover container of heavy cream that I had purchased and used some to make my Cauliflower Cream Sauce.  I didn’t know what to do with the rest of the carton and I didn’t want it to go to waste especially since I buy organic and it costs more!  So I did some go0ggling and found out just how incredibly simple it is to make butter.  Yesssssss, homemade butter.

OMG Let’s talk about GMOs!

I’m a mom to a vibrant little girl and a baby girl.  My days are filled with all kinds of messes, meltdowns, sticky stuff and, thanks to my Moms’ group, the occasional adult conversation.  At the most recent Moms’ group meeting, we had a dietitian speak with us Moms about the importance of nutrition and choosing the right foods for our families.  She started with the basic and alarming statistics about childhood obesity adding the fact that children in the United States have a shorter life expectancy than their grandparents!  There was a lot of talk about the healthy food choices, veggies and the list goes on and on.

Mini Lentil Loaf

This recipe is one of the very first recipes I wrote for this blog.  I decided to take a few new pictures and highlight this recipe again.  It’s one of my family’s favorites!  Lentils are very good for you and they are cheap!  Double bonus!  This recipe has the feel and look of a classic meatloaf but is loaded with heart healthy lentils and veggies.  I prepare these in a muffin tin for several reasons: Miss Ava is fascinated with anything in a muffin tin (even lentils!), it cooks faster and it makes portion control much easier.

Whole Wheat Pumpkin Bread

This recipe is for a melt-in-your-mouth, super healthy, vegan, whole wheat, clean, clean, clean Pumpkin Bread!  YES!!  I was at a friend’s house earlier this week, and she had some pumpkin bread and warm apple cider.  It just made my heart happy!  So a few days later when it started raining, baking pumpkin bread just seemed like the thing to do.  I found a recipe and followed the first 2 ingredients and then my brain took over!  This is what I came up with, and Miss Ava and I think it is incredible!!

Avocado Pesto with Roasted Cherry Tomatoes

You know that moment around 5:30 when you realize you don’t have anything planned for dinner?  Well, the other day I had that moment!  The panic started to set in as I realized running to the grocery store was not an option with a wound-up preschooler and an overtired baby.  The options within my own kitchen seemed slim, but this is what we came up with and I have to say it was pretty tasty!  And pretty darn healthy, too!

I have a secret! Onion Dip

I have a secret!  I’m going to set up a scene for you….It’s Sunday afternoon, we’ve had a full morning at church and then spent too much time and too much money at the grocery store.  The leaves are starting to change, there is a chill in the air.  The TV is on and a football game is blaring.  And all of a sudden I get that urge, the urge to plop down on the couch and watch the game.  And guess what?  I DON’T want a smoothie as my snack.  I don’t want to reach for a banana.  No, watching a ball game calls for some good ole potato chips and dip!!
