Breakfast…the most important meal of the day. And we all know an apple a day will keep the doctor away, so why not combine the two! This is the perfect Fall breakfast for the whole family. For baby a beautiful puree of apples, raisins and oats. For the rest of the family enjoy this as a topping for whole grain waffles.
Whole Grain Waffles with Apple Cinnamon Topping
- 1 cup Whole Wheat Flour
- 1/4 cup All Purpose Flour
- 1/2 cup Milled Flax Seeds
- 1/4 cup Wheat Germ
- 4 teaspoons Baking Powder
- 1 tablespoon Sugar
- 2 beaten Eggs
- 1 3/4 cups Milk
- 1/4 cup Canola Oil
- 1/4 cup Applesauce
- 1 teaspoon Vanilla Extract
Combine all the dry ingredients in a large bowl and set aside. Mix together the wet ingredients in a separate bowl and slowly add them into the dry goodies. Stir just until smooth, do not over mix.
Preheat waffle iron according to manufacturers directions, coat with cooking spray and cook in batches until golden and delicious! If you have left over batter and full bellies, go ahead and make the rest of the waffles, cool on a cooling rack, then place in a zip top freezer bag with parchment paper in between each waffler and freeze. Simply pop the waffles in the toaster for a quick and easy weekday breakfast!
Apples, Raisins and Oats, Oh My!
- 2 Medium Apples, peeled, cored, chopped (braeburn or gala are great but any will do)
- 1/4 cup Raisins
- 1/3 cup water
- 2 Tbsp Old Fashioned Rolled Oats
Combine the water and oats in a saucepan and simmer for about 2 minutes. Add the apples and raisins, cover and simmer for about 3 to 5 minutes. Add a dash or two of cinnamon to taste. Puree a portion to desired consistency for your baby. And use the remaining mixture for topping on waffles. This is also a great treat for toddler age kiddos and makes a delicious topping to vanilla ice cream! Yumum!
