I love checking out all the citrus fruits that are available during the winter months. Though I’m not a big fan of just taking a bite out of an orange….bring some other friends to the party and I am there! Like this citrus marinaded chicken! It is simple and oh so fresh and tasty during these chilly winter days!
- 1 tbsp Extra Virgin Olive Oil
- 2 cloves Garlic, minced
- 1 Shallot, minced
- 1 Lemon, juiced and zested
- 1 Orange, juiced and zested
- 1 tsp Thyme
- Salt and Pepper
- 4 Boneless, Skinless Chicken Breasts
Place chicken in a zip top plastic bag. Combine remaining ingredients and pour into bag.
Place in refrigerator for 1-2 hours. Transfer chicken and remaining juice to a casserole dish.
Bake in a 350 degree preheated oven for 45 to 50 minutes. Rotate the chicken halfway through and baste the chicken with the juices.
I served this along side Roasted Broccoli and Cauliflower. It was delicious!!
