Citrus Chicken

I love checking out all the citrus fruits that are available during the winter months.  Though I’m not a big fan of just taking a bite out of an orange….bring some other friends to the party and I am there!  Like this citrus marinaded chicken!  It is simple and oh so fresh and tasty during these chilly winter days!

Citrus Garlic Chicken

  • 1 tbsp Extra Virgin Olive Oil
  • 2 cloves Garlic, minced
  • 1 Shallot, minced
  • 1 Lemon, juiced and zested
  • 1 Orange, juiced and zested
  • 1 tsp Thyme
  • Salt and Pepper
  • 4 Boneless, Skinless Chicken Breasts

Place chicken in a zip top plastic bag.  Combine remaining ingredients and pour into bag.

Place in refrigerator for 1-2 hours.  Transfer chicken and remaining juice to a casserole dish.

Bake in a 350 degree preheated oven for 45 to 50 minutes.  Rotate the chicken halfway through and baste the chicken with the juices.

I served this along side Roasted Broccoli and Cauliflower.  It was delicious!!

  5. Me too! Love how bright these flavors are.

  6. Oh wow, that looks fantastic. I have no problem biting into an orange or any other citrus fruit (I love them, in fact), but I do adore them cooked up. The pairing with garlic is magic.
