Birthday Cookies

Happy Birthday Ava!

Has it really been a year already!?!  I cannot believe that my little baby girl is one year old today!  Agh, I’m fighting the tears as I type this!  All happy, happy, wonderful, joyous, excited and slightly scared tears!  It’s hard to imagine that just one year ago today my husband and I were getting our first lesson in diaper changing!  Well, I am quite the pro now.  geesh!  I love my little girl, every single thing about her…even all those diapers!  There are so many incredible experiences about this first year and so many firsts from her first cry to her first laugh and now as we anticipate her first step!

We are having a family gathering soon to celebrate but I must, I mean….she must have a special treat on her very first happy birthday!  And since I’m not too keen on pouring a cup of sugar into her little system I have come up with a tasty First Birthday Cookie!  It’s sweet and there is plenty of wholesome goodness in these cookies.

Birthday Cookies

  • 1 cup Oats
  • 2 cups Whole Wheat Flour
  • 2 tbsp Milled Flax Seeds
  • 3 tbsp Wheat Germ
  • 1/3 cup Brown Sugar
  • 1 1/2 tsp Ground Ginger
  • 1 tsp Ground Cinnamon
  • 1 tsp Baking Soda
  • 1/3 cup Agave Nectar (you can use *honey if you are not making these for a baby)
  • 1/3 cup Apple Puree (aka applesauce)
  • 1/4 cup Canola Oil
  • 2 Eggs, lightly beaten
  • 2 tbsp Molasses (unsulphured please)

Combine the dry ingredients in a large bowl.

Combine the wet ingredients in a small bowl and add to the dry.

Stir together until a nice dough is formed.  Drop the cookies onto a baking sheet.

Bake in a 375 degree preheated oven for 8 minutes.  Transfer to a cooling rack and allow to cool……or not!

These cookies are delicious just as they are BUT if I were making these for myself and not just my baby girl.  I would add in some other goodies…like chopped walnuts and dark chocolate chips.  Or you could add raisins, if you’re in to that sort of thing.

I actually made this cookie dough last week.  Knowing full well that I would have no time to make and bake cookies on my baby girls birthday.  So I divided the dough into cookie sized portions onto plastic wrap.

Wrap up the cookie dough and place in a zip top bag.  My Grandma used to keep frozen cookie dough balls in old cool whip containers.  She always had a stash of cookie dough ready to go!

I have heard that frozen cookie dough can last about 3 months in the freezer.  Though I’ve never tested this out because who just keeps cookie dough for 3 months!?!  You know what I’m saying!  HA!

    Yum-o-rama. Just made these for my daughter (same age as yours!) and she LOVES them. They were super easy, tasty and what a nice little treat. Lots of wholesome flavor and not too sweet at all. Thanks! I am going to try the mac and cheese this week too…looks equally yummy!
