Whole Wheat Apple Pancakes

Typically anything with the word “cake” in it doesn’t usually qualify as a healthy food option.  However, when we’re talking about whole grains and fruit, sure, why not!  Check out these tasty Whole Wheat Apple Pancakes.

They are simple to make and freeze perfectly.  I keep a stash in the freezer and pull one out for my little girl and she loves to eat these finger food style!  I just let them sit at room temp and they thaw in just a few minutes.  You can also pop them in a toaster or toaster oven to get them nice and warm.

Whole Wheat Apple Pancakes

  • 1 1/2 cups Whole Wheat Pastry Flour (you could use White Whole Wheat Flour as well)
  • 1 tbsp. Baking Powder
  • 1/2 tsp. Cinnamon
  • 3/4 cup Applesauce
  • 1 cup Milk
  • 2 Egg Whites
  • 1 tsp. Vanilla Extract

Stir together the dry ingredients in a small bowl.  Combine the wet ingredients in a large bowl and pour the flour mixture over the wet ingredients.  Stir just until combined.  Lightly grease and heat a griddle over medium high heat.  Pour about 1/4 worth of batter onto the hot griddle.  These little guys puff up quickly.

Once bubbles appear flip the pancake.

These pancakes are a tasty treat alone, or topped with all kinds of goodies like fresh apple slices, warm maple syrup, a few chopped toasted walnuts, or this apple cinnamon raisin topping would be great!

And don’t forget to stop by Babble.com to give Squash Blossom Babies a thumbs up…I was recently nominated as one of the top 100 Food Mom Blogs!  Thank you!!

  4. Whitney,
Your pancakes look so light and fluffy: apples, cinnamon, vanilla and the egg whites make it all just sound so perfect. I’m stuffed after dinner but after seeing “these little guys”, I’m already thinking of breakfast with your suggestions of toasted walnuts and scrumptious topping…oooohhhh!!!! Vive demain….

  8. Have you seen the recipe where you dunk an entire apple ring into the batter before cooking? It’s an apple pancake at it’s finest. Maybe I got the recipe from you? That’d be embarressing. Well, it’s a great recipe, either way! LOL :)

Perfectly! That’s what I do – wake up Saturday mornings and make pancakes and freeze all the leftovers for Ava. I usually just let them sit out at room temp and let them thaw…it only takes a few minutes.
