Typically anything with the word “cake” in it doesn’t usually qualify as a healthy food option. However, when we’re talking about whole grains and fruit, sure, why not! Check out these tasty Whole Wheat Apple Pancakes.
They are simple to make and freeze perfectly. I keep a stash in the freezer and pull one out for my little girl and she loves to eat these finger food style! I just let them sit at room temp and they thaw in just a few minutes. You can also pop them in a toaster or toaster oven to get them nice and warm.
Whole Wheat Apple Pancakes
- 1 1/2 cups Whole Wheat Pastry Flour (you could use White Whole Wheat Flour as well)
- 1 tbsp. Baking Powder
- 1/2 tsp. Cinnamon
- 3/4 cup Applesauce
- 1 cup Milk
- 2 Egg Whites
- 1 tsp. Vanilla Extract
Stir together the dry ingredients in a small bowl. Combine the wet ingredients in a large bowl and pour the flour mixture over the wet ingredients. Stir just until combined. Lightly grease and heat a griddle over medium high heat. Pour about 1/4 worth of batter onto the hot griddle. These little guys puff up quickly.
Once bubbles appear flip the pancake.
These pancakes are a tasty treat alone, or topped with all kinds of goodies like fresh apple slices, warm maple syrup, a few chopped toasted walnuts, or this apple cinnamon raisin topping would be great!
