Peanut Butter Banana Cookies

If you know me, you know that I LOVE chocolate!  Chocolate and I go waaaay back.  All the way back to elementary school.  Chocolate chip cookies, yes, please.  Hot Chocolate, yea buddy!  Chocolate covered bananas, you betcha!  A small square of 80% cocoa dark chocolate…..oh please, oh please, oh please!!!  NO!  No chocolate for me….you see, I had this “brilliant” idea to give up chocolate for Lent!  Geesh, it seems like Fat Tuesday was months ago and like Easter will never be here!!  Over the last several weeks I have tried many different things to satisfy the chocolate cravings.  Peanut butter and I have been getting pretty close lately.  I have come up with a seriously tasty and pretty healthy peanut butter cookie that I know you and your kiddos will love!!

Peanut Butter Banana Cookies

  • 1 cup Oat Flour (just blend a cup of oats in a blender)
  • 1/2 cup Whole Wheat Pastry Flour
  • 1 cup Peanut Butter (you could actually use any kind of nut butter for this)
  • 1 Banana, mashed (about 1/2 cup)
  • 1/3 cup Agave Nectar or Honey

Combine blended oats and wheat flour.  Combine the wet ingredients and stir together with the oats and flour until a thick dough forms.

Drop dough by the spoonfulls onto cookies sheets.

Introduce the dough to the back of a fork to get the classic peanut butter cookie look.

Bake in a 350 degree preheated oven for 10 minutes.  Remove from pan and allow to cool on a cooling rack.

What?  That’s not good enough for you?  You want a little more over the top….okay….read on!

Using your hands form the dough into a ball…

Roll the sides in finely chopped peanuts…

Transfer to the cookie sheet and invite the fork over…

Bake for 10 minutes.

I promise you will be pleased with these cookies!  So will your kids, your partner, your friends, your enemies, anyone you are willing to share them with…..and no one will miss the sugar!!!!!
