Sweet Potato “Fries”

It was recently brought to my attention that I have never shared the recipe for my daughter’s all time favorite food.  You can probably guess what it is because I’ve been cooking with it a lot lately….remember these tasty burritos and did you try these awesome pasta shells yet?  Yep, sweet potatoes!!!  She loves them!

I hardly call this a recipe because it’s really just roasted sweet potatoes but, what the heck, it’s simple, they are healthy and wholesome!  If sweet potatoes aren’t part of your grocery list, I highly recommend adding them!  Sweet potatoes pack a serious dose of beta carotene.

Sweet Potato “Fries”

  • 1 Large Sweet Potato
  • Extra Virgin Olive Oil
  • Spices

Slice the sweet potato into thin sticks.  Try to keep them relatively similar in size.  I peel the sweet potatoes for my daughter….but she is 13 months old.  If you are a big kid, you know who you are, you should be eating the skin on your potatoes!  That’s where all the good fiberoussy good stuff is, so eat that!  Plus you won’t have to get a vegetable peeler dirty!

Place the sweet potatoes in a shallow roasting pan and lightly drizzle with extra virgin olive oil.

Sprinkle on your favorite spices.  Get creative here!  My daughter loves them with cinnamon.  My husband prefers salt, pepper and some spicy cajun seasoning.  You could go for chili powder, cumin or just plain jane with Kosher sea salt.

Personally, I think your hands are the best tool to toss together the oil and seasonings.  Plus I don’t like to get another utensil dirty.

Bake in a 375 degree preheated oven for 20 minutes.  Remove from oven and give them a stir.  Prick with a fork to check for tenderness.  A fork should be able to cut through the crispy crust easily.  Bake for an additional 5 to 20 minutes if needed.
