The Easter Bunny is coming!! But I’m a little nervous about what that giant hopping creature will bring my little girl! So I’m making special treats to fill Ava’s Easter Eggs. Don’t you worry, Mr. Easter Bunny, I’ve got it covered! Hold onto your Easter baskets and get ready for this recipe…..Chocolate Animal Crackers! They are so cute and I can’t wait for my little chick to try them!
Chocolate Animal Crackers
- 1/2 cup Oat Flour, simply blend oats in a blender
- 1/4 cup Unsweetened Cocoa Powder
- 3/4 cup Whole Wheat Pastry Flour
- 1/4 tsp baking soda
- 6 tbsp Honey or Agave
- 1/2 tsp Vanilla Extract
- 4 tbsp Buttermilk
- 1/4 cup Butter, softened
Combine all ingredients until a stiff dough has formed.
Cover with plastic wrap and chill for 1 hour. Roll the chilled dough on a floured surface and cut with little animal cookie cutters.
Bake your little farm army on a cookie sheet in a 350 degree preheated oven for approximately 7-10 minutes. The cooking time will vary based on the size of the cookies. Remove the cookies from the pan and cool on a cooling rack.
These little cookies are going to fill my little girl’s Easter Eggs, and I can’t wait for her to discover these during her first Easter Egg Hunt!!
