April is National Grilled Cheese Month! Woohoo!…actually I don’t really care about that BUT my little girl LOVES grilled cheese and I’m sure there are about a million other kiddos out there that have some mad love for grilled cheese sandwiches! A simple and quick grilled cheese sandwich can be a great opportunity to give your kiddos a wholesome meal. Go for whole grain bread, natural cheese (please don’t use the stuff that has to be unwrapped 4 times from a plastic sleeve, ick!) and sneak in some fruits and/or veggies.
Here is a sandwich that reminds me of a trip to England we took several years ago. We were traveling from London to Cornwall and stopped in a quaint little English village for lunch. It was a cold and windy day and we were delighted to be sitting in the pub next to the fireplace ordering lunch. As soon as I saw the sandwich on the menu I knew I needed to have it….Cheese Sandwich with Apple Chutney. It was delicious and so was the sparkling cider that I sipped along with it. For this recipe today I simply add thinly sliced apples to the grilled cheese, but it always reminds me of the cheese sandwich from the English countryside. I can’t wait to take Ava on that trip!
Grilled Cheese and Apple Sandwich
- 2 Slices of Whole Wheat Bread
- Couple slices of Cheddar Cheese, thinly sliced
- 1/2 an Apple, thinly sliced
Lightly butter one side of each piece of bread, I like to use Smart Balance buttery spread. Layer the thinly sliced cheese and apples.
Simply toast the sandwich on a preheated griddle pan for about 2 minutes per side.
Use your imagination with these kind of sandwiches….make them your own by adding mustard, or sliced pears, roasted turkey, sage, avocado, tomatoes, spinach…..you get the idea, right!?!
