The recipe today is one of my favorite recipes. It’s simple, it’s healthy and it has the word burger in it!! Yep, veggie burgers made with black beans and sauteed veggies. I finish it off with a Cilantro Mayonnaise and serve the burgers on whole wheat flat bread. This is a family favorite and I’m hoping your family will love it too!
Black Bean Burgers
- 2 tbsp. Canola Oil
- 2 Carrots, chopped
- 2 Celery Stalks, chopped
- 1 Red Pepper, chopped
- 1 Onion, chopped
- 1 Clove Garlic, chopped
- Salt and Pepper
- 2 Cans Black Beans, divided, rinsed and drained
- 1 Egg, lightly beaten
- 1/2 tsp. Cumin
- 3/4 cup Whole Wheat Bread Crumbs
Heat the oil in a large saute pan and saute the veggies for about 10 minutes. Add garlic and cook another 3-5 minutes until tender. Allow the veggies to cool. While the veggies are cooking blend 1 can of black beans in a food processor.
In a food processor blend together the sauteed veggies. Work in batches if the bowl of the food processor is too small.
Transfer to a large bowl and stir together with salt, pepper, remaining can of black beans, egg, cumin and bread crumbs. Stir until thoroughly combined.
Form into 6 or 7 equal-size burgers. Heat a griddle over medium high heat, spray with cooking spray and cook 3-4 minutes per side.
- 1/2 cup Mayonnaise
- 2 tbsp Fresh Cilantro
- 1 Lime, juiced
Stir to combine and spread on the buns.
