Chicken Tortilla Casserole

You know how it is when you are getting ready to head out of town and you want to use up everything in your fridge and pantry that is about to go bad….well, it happens to me all the time and this casserole is one of those dishes that uses up all that good stuff so none of it goes to waste!

Chicken Tortilla Casserole

  • 2 Chicken Breasts
  • 1 Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 1 cup Chicken Stock
  • 1/4 tsp. Chili Powder
  • 1/2 tsp. Cumin
  • 1/4 tsp. Garlic Powder
  • 1/2 tsp. Dried Oregano
  • 4 Whole Wheat Tortillas
  • 1 can Refried Beans
  • 1/4 cup Sour Cream
  • 1 1/2 cups Cheese, grated

If you happen to already have leftover cooked chicken, skip this first step.  Otherwise….Place the chicken and chopped veggies in a crockpot.  In a small bowl combine the chicken stock with the herbs and pour into the crockpot.  Cover and cook for 4 to 6 hours on a low setting.

Remove chicken and use a slotted spoon to scoop out the veggies.  Shred the chicken using two forks.

Lightly spray a 9×13 casserole dish with cooking spray and start to layer the ingredients…

2 whole wheat tortillas…

Spread on half the refried beans…

Then half the chicken and veggie mixture…

Then half the sour cream and half the cheese….

Repeat the layers and bake in a 375 degree oven covered for 20 minutes.  Then remove from oven, uncover and bake an additional 10 minutes.

If you happen to have the very end of a bag of tortilla chips, crush them up and sprinkle on top for the last 10 minutes.  This adds a wonderful crunch to the casserole.

  1. I’m more than willing to leave town in order to have to clean out the fridge and make this dish! I love this kind of casserole; very, very much. I’ll have to use flour tortillas because the corn ones make me gag (weird, I know), but yup, this will be made. Thanks for sharing your recipe.

  2. I love the idea of this! Bascially a Mexican take on lasagna. I think I could get my 10 year old to eat this. I don’t have a slow cooker but could just poach the chicken instead. I’m going to try this soon. Thanks.
