Blueberry Salsa

It’s blueberry season!!!  Blueberries seem to be everywhere and the prices are unbeatable for these antioxidant-packed berries.  Have you been eating so many blueberries that you feel like you might turn blue?  Are you tired of blueberry pancakes and blueberry muffins and blueberry smoothies and blueberry salad?  Yeah, I’m over it!  Until I remembered this fantabulous salsa that I made last summer with my brother.  Blueberry Salsa – yes, salsa!  It’s perfect, it makes sense on hot summer days and it’s really stinkin good!

Blueberry Salsa

  • 1 cup Chopped Blueberries
  • 1/2 cup Whole Blueberries
  • 1/4 cup Red Bell Pepper, finely chopped
  • 1 Jalapeno, seeded and finely chopped
  • 2 Tbsp Lemon Juice
  • 2 Tbsp Fresh Cilantro, chopped or torn

This recipe is so simple!  Rinse the blueberries and chop 1 cup…

Stir in the peppers…

Squeeze on the fresh lemon juice…

Finish with fresh cilantro…

This salsa looks impressive and the flavor is incredible!  You must try this!!  Get creative with this and pair with any kind of grilled foods, Mexican dishes or go for the classic and pair this salsa with corn chips!

Go ahead and double dip!  I dare you!
