I love peaches and a perfectly juicy peach can turn an icky day into a peachy keen day! However, I do not like peaches from a can, I do not like them in a pan and I do not like them in the sand. Peaches shouldn’t be in a can! BUT – you say what about the perfectly peeled peaches in the can? I say yes you can, you can peel peaches and never eat them from a can!
Gee can you tell I have toddler and guess what books we read!?! Anyway, here is a simple way to peel peaches.
Bring a large pot of water to a full boil. Score the bottom of the peaches with an X. Do not cut all the way through the peach just cut the skin.
Drop the peach into the boiling water for 30 – 40 seconds.
Use a slotted spoon to remove the peaches from the boiling water and transfer immediately to a bowl full of ice water.
Take the peaches out of the ice bath after 1 minute. Using the score marks gently peel the skin away.
Ta Da! A perfectly peeled peach!
Just wait until you see what deliciousness I made with my peeled peaches!

Ok, so now I have a tid bit for you, but maybe you already know this!?!?!??! Anyhow, we freeze them in freezer bags, whole with skins on. Then, this winter when we are dying for a taste of summer goodness, I just pull a few, run them under hot water and the skin literally falls off in your hand. A-stinkin-mazing.
