It’s picnic season!! Actually, at the moment it’s still too hot for a picnic but, hey, you can still have a picnic inside – sure, why not!?! What does everyone seem to bring to a picnic or a potluck? Pasta salad!! Well, of course, pasta salad is pretty easy to make and if you bring on the right ingredients you can have a really flavorful side dish. This is one of my favorite pasta salads and I make this often. My daughter loves this – yes, this IS kid friendly even though there is red onion and spinach, dice it up small and let the kiddos develop a taste for those wonderful flavors! I actually served this at my daughters first birthday party.
Sun Dried Tomato Feta Cheese Pasta Salad
- 1 lb Whole Wheat Fusili Pasta
- 1 cup Walnuts, toasted
- 1 cup Feta Cheese, crumbled
- 1/2 cup Sun Dried Tomatoes, chopped
- 3/4 cup Red Onion, finely diced
- 3 cups Baby Spinach, torn
- 1/2 cup Canola or Extra Virgin Olive Oil
- 1/2 cup Red Wine Vinegar
- 4 Cloves Garlic
- 2 tsp Dijon Mustard
- Salt and Pepper
Cook the pasta according to the package directions, drain well and rinse under cold water.
