I have a new favorite food blog that I have been stalking for a few weeks now and I just have to share it with you all! Green Kitchen Stories is a fabulous site with great recipes and beautiful photos. Best of all they have a wee one and are health conscious! My recipe today is from this site and they are the most incredible, sugar free zucchini cupcakes ever!
Sugar Free Zucchini Cupcakes
- 1 2/3 cup Spelt Flour
- 2 tsp Cinnamon
- 2 tsp Cardamom
- 2 tsp Ground Cloves
- 1 tsp All Spice
- 2 tsp Baking Soda
- 1 Banana, mashed
- 3 Eggs
- 4 Tbsp Maple Syrup
- 1 tsp Vanilla
- 2 cups Zucchini, grated
- 1/2 cup Coconut Oil
- 2/3 cup Walnuts, chopped
- 1/2 cup Dark Chocolate Chips
Sift the dry ingredients together and combine with the mashed banana, eggs, maple syrup and vanilla. Gently stir in the zucchini, coconut oil, walnuts and chocolate.
Chocolate chips were not part of the original recipe and I just couldn’t help myself. Sometimes it just seems wrong to get the oven hot, break out the cupcake pan and NOT have chocolate involved. So I just HAD to!
Spoon the batter into a greased cupcake pan or liners and bake at 375 degrees for 20 – 25 minutes. While these little cuties are baking whip up this Zucchini Lime Frosting!
Zucchini Lime Frosting
- 6 Ounces Cream Cheese, room temperature
- 3 Tbsp Honey
- Zest from 1 lime and juice from 1/2 the lime
- 1/3 cup Zucchini, finely grated
Simply stir all ingredients together. Frost the cupcakes once they have cooled.
I was so excited to give one of these tasty sugar-free treats to Miss Ava I could hardly stand it!!
