I have a lot of friends and family that are saying bye-bye to dairy. When I think of parting ways with dairy, I think of yummy creamy pasta and fear that I would never again be able to enjoy something so ooey gooey delicious as pasta con broccoli or fettuccine alfredo. Well, apparently you can!
This summer I shared with you a new find, Mimic Creme, and my dairy free ice cream. This pasta recipe uses this non-dairy cream and it’s pretty tasty and looks like the real thing!
Pasta Con Broccoli
- 1/2 lb. Fettuccine or Bow Tie Pasta (Whole Wheat, please)
- 2 cups Mimic Creme
- 3 Cloves Garlic
- 2 Tbsp Non-Dairy Butter Spread
- 2 cups Broccoli
- 3 – 4 Tbsp Parmesan Cheese (optional) or Nutritional Yeast
Cook the pasta according to package directions.
Melt the butter in a large saucepan and stir in the garlic for about 1 min. Add broccoli, creme and stir to warm through about 5 minutes. Season with salt and pepper as desired.
Stir in noodles and Parmesan cheese. Season with salt and pepper as desired.

This is perfect for me! I’m lactose intollerant, although I do often have cheese, I can’t help it. I love simplistic dishes like this and I think pasta & brocolli go perfectly together. Yum!
Wow, this looks amazing. My sister is lactose intolerant and its hard to cook for her sometimes because of this. This would be a great recipe to file away for the next time she comes to visit. Great to know about the Mimic Cream too for other dishes we might make.
