White Bean Soup

Have you heard?  Are you there?  Do you pin?  Are you obsessed with it yet?  I am, I love it, can’t get enough of it, gotta check it everyday!  Is there a support group I should be going to for this addiction I’m forming!?!  The obsession I’m referring to is Pinterest.  It’s a great way to catalog favorite recipes, DIY projects, fitness info, design galleries and SO MUCH MORE!  You can even follow Squash Blossom Babies on Pinterest.  

Today I want to share a pin that I recently saw and it’s shocking!  It’s an image of fast food that has been sitting out for over a year and there is no mold, no decay and no odor coming from this ultra processed food.  Check it out.  

Please know that I am not placing any judgement here!  I’ve eaten fast food, we’ve all eaten fast food. Heck, it’s hard to find anyone in this country that hasn’t eaten at a fast food place at least a bagillion times.  right?  The point here is to continue to spread the message for real food!  Speaking of real food……how about some soup?  This White Bean Soup is really easy and super healthy!

White Bean Soup

  • 1 Carrot, chopped
  • 1 Celery Stalk, chopped
  • 1/2 Onion, chopped
  • 2-3 Tbsp Extra Virgin Olive Oil
  • 5 Cloves Garlic, minced
  • 3 Cans Cannelloni Beans (dried beans that have been soaked are even better)
  • 4 cups Vegetable Stock
  • 2 Sprigs Rosemary
  • 1 Bay Leaf
  • Salt and Pepper as desired
  • Couple handfuls of Spinach
Warm the oil in a large soup pot and saute the onion, carrot and celery until softened, about 8-10 minutes.  Add garlic and stir for 1 minute.  

Add beans, broth and seasonings.  Bring to a simmer and cook over low heat until tender.  15 – 30 minutes.  

Remove the bay leaf and break out the immersion blender and give it a whiz to give this soup a creamy texture.

 Just for the fun of it, I threw in a couple of handfuls of spinach when I was just about to serve the soup. 

 

You can even top this soup with a little sprinkle of Parmesan cheese.

  1. I definitely try to stay away from fast food as much as I can – but that picture is a real eye opener! Your soup sounds absolutely delicious =)

  2. Your soup is superb! I love the spinach thrown in at the end… Makes it colorful and healthier than it already is! And the photo of the year-old burger and fries makes a very stark contrast to you beautiful recipe.

  3. I love the taste of McDonalds fries. They are hard to resist. Nothing speaks volumes in the comfort food department than soup. So, the soup wins! Thanks for sharing.
