Today I’m sharing a very random recipe with you that I created based on what I found in my fridge that needed to be used up asap! You’ve been in that situation before, right? I had one baked chicken breast, a little bit of spinach that was on its last day and two tomatoes. The dish turned out great and best of all Miss Ava loved it! Hooray for a happy toddler eating healthy food!
Pasta with Spinach and Chicken
- 1/2 box Whole Wheat Spiral Pasta
- 1 Chicken breast, cooked and cubed
- 4 Cloves Garlic, minced
- 1 cup Vegetable Broth
- 1/2 lb Fresh Baby Spinach
- 2 Tomatoes, chopped
- Fresh Grated Nutmeg
- Salt & Pepper
- Parmesan Cheese
Cook pasta according to package directions. Meanwhile, in a large skillet heat the oil to medium heat. Add the tomatoes and garlic, cook 4-5 minutes. Add the nutmeg, salt and pepper, chicken, broth and cook until warmed through. Add the spinach and cook until wilted. Stir in cooked pasta and Parmesan cheese.
Add the broth, chicken and seasonings.
Add spinach and cook until wilted.
Top with cheese, please!
