Miss Ava just celebrated her second birthday and I can hardly believe that 2 years have already gone by! We are having so much fun with this little girl I can hardly stand it! Okay, so a birthday means birthday party and birthday party means birthday cake! Yippee! Last year I made Ava healthy and wholesome birthday cupcakes. This year I’m taking it up a notch! Wait until you try this recipe! My inspiration for this recipe came from my dear friend Bethenny Frankel. Alright, Bethenny doesn’t know that we are BFF’s but we are so there. Thanks for the inspiration, friend!
Chocolate Cupcakes (Vegan)
- 1 1/4 cup Oat Flour (measure oats and blend in a blender – tada… oat flour!)
- 1 cup Sugar, raw is preferred
- 1/2 cup Cocoa Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup Warm Water
- 1 tsp Vanilla Extract
- 2 Tbsp Coconut Oil
- 1 tsp White Vinegar or Apple Cider Vinegar
Preheat the oven to 350 degrees. Combine the dry ingredients and then stir in the wet ingredients. Mix until smooth. Pour the batter into paper-lined cupcake tins and bake for 20 – 25 minutes. This recipe made 12 perfect cupcakes.
We had an Elmo Birthday Party, so of course we needed Elmo cupcakes.
I used fondant, colored it and cut out the face shape using a scallop edge cutter.
And of course, we had to make Ava her own special cake complete with fondant crayons!
