Yogurt Biscuits

This is one of those recipes that makes me smile!  A healthy biscuit – yeah, I said it…a healthy biscuit!  It’s true – zero butter is involved here, folks!  It can be done!!  With a little help from an old favorite – Greek Yogurt.

Before we get to the biscuits, let’s talk about Greek Yogurt.  When I was in high school, my Dad took me on a trip to Turkey and I recall eating Greek yogurt and a baguette every single morning we were there.  It was fabulous and I can still taste that delicious yogurt sweetened only with honey.  There has been a recent surge in the popularity of Greek Yogurt and a lot of companies attempting to cash in on this.  Make sure to read the labels.  The ingredient list should be short and simple – cultured milk.  Avoid all the other “stuff” and if you want more flavorings add your own fruit, nuts, and honey, agave or pure maple syrup to sweeten it.

Okay now onto the biscuits.  This recipe really is as simple as it looks.  The Greek Yogurt adds a bit of tang to the biscuits almost like a buttermilk biscuit.

Yogurt Biscuits

  • 3/4 cup Whole Wheat Pastry Flour
  • 3/4 cup All Purpose Flour
  • 2 tsp Basking Powder
  • 1 tsp Salt
  • 1 1/4 cup Greek Yogurt
Preheat the oven to 450 degrees.  Combine the dry ingredients and make a well in the center.  Add the yogurt and gradually drag the flour into the yogurt with a fork.  Depending on the quality and thickness of your yogurt, the dough might not absorb all the flour.  Either way, flour a board and plop the dough out of the bowl.  Gently fold the dough in half, pat to 1/2 inch-ish thickness, turn and fold and pat to 1/2 inch-ish thickness again.  Cut out the biscuits and transfer to a baking sheet.  Bake for 10 -14 minutes.  

Make a well…

Drag the flour into the yogurt to form the dough.  It’s a very delicate dough so be gentle and don’t overwork it.

Cut the dough and get ready to bake.

Look at that!!!!  Butter-free flaky biscuit!  Eat your heart out, butter lovers!!  Woohoo!
