Strawberry Sugar Cookies

Last year for Easter I made Ava some adorable Chocolate Animal Crackers.  These are a tasty treat and a great way to limit the sugar overload hiding in the Easter Eggs.  I had a discussion with the Easter Bunny and this year Ava’s Easter Eggs will be filled with Annie’s Bunnies Whole Wheat Organic Crackers, a couple pieces of chocolate and a few quarters to go in her new piggy bank.

After my chat with the Easter Bunny something came over me……and a few hours later we were eating cookies!  The real deal, butter, sugar, flour – cookies!!  This recipe is not healthy but baking cookies with your wee tot and making a mess in the kitchen is SO happy.  And in my world, happy is healthy; therefore, I declare this a healthy activity!

Strawberry Sugar Cookies

• 1/2 cup Butter, softened (YIKES!!!!)
• 1/2 cup Sugar (Yikes again!!!)
• 4 Tbsp. Strawberry Puree
• 1/2 tsp. Vanilla Extract
• 1 Egg
• 1 tsp. Baking Powder
• 3 cups Flour

Creaming the butter and sugar together is an important step.  You want the butter and sugar to be a smooth mixture.

Simply puree a few strawberries in a food processor or blender.   Cut the cookies and bake.  Make sure to cool on a cooling rack.

My original idea was to use a strawberry puree to make the cookies a nice pink color. Well, that didn’t really work, but they are super tasty and they do have a hint of pink color and little speckles of strawberry throughout.  Ava and I think they are delicious!  And she is so proud of the cookies she decorated!
