It’s Spring Time and the Livin’ is Easy! Well, actually it’s pretty stinkin’ hot for the start of Spring. So hot that it’s already to the point sometimes when it just seems wrong to turn the oven on to cook dinner. Normally, this is grilling season but we have a family of squirrels that moved into our grill during the winter……and, well, we can’t really start grilling until the kids move out, if you know what I mean!?!
Yes, that is a little squirrel that has chewed a hole in the grill cover so that he has a window in his new home.
In the meantime, this is a perfect no-cook, no-mess, crowd-pleasing sandwich that’s perfect for lunch or dinner.
Hummus Wrap
- Hummus (make your own if you have the time)
- Lettuce
- Carrot, shaved using a peeler
- Feta Cheese, crumbled
- Roasted Red Pepper
- Flatbread or Pita Wraps
This is so simple that you can hardly call it a recipe. Just assemble all the ingredients, wrap it up and enjoy!
Flat Bread
Use a vegetable peeler or a mandolin for some shredded carrot.
Roasted red peppers are a must.
Cheese, cheese, yes, please. Don’t forget the cheese.
Wrap it up and dinner is served!
I served this with a simple green salad and Roasted Sweet Potato Fries.
