Burgers, burgers, burgers! Who doesn’t love a nice, thick, juicy burger? Okay, maybe vegetarians, vegans, heart patients, people with high cholesterol, and people trying to find their waist line. Regardless of your situation, personal preference, political stance and morals, I think we can all agree that a good burger brings on smiles and smiles are good, good, good! Whether you are anti-meat or pro-beef, you are going to love this burger recipe!
BBQ Chickpea Burgers
Inspired by How Sweet It Is
- 1/4 cup Red Onion, chopped
- 1 Small Bunch of Broccoli, chopped about 1/2 cup
- 2 Small Carrots, chopped
- 1/2 tsp Olive Oil
- 2 cups Chickpeas
- 1/2 cup Cheddar Cheese, grated (this is optional if you want to make this Vegan)
- 2 Tbsp BBQ Sauce
- 1 tsp Honey
- 2-3 Tbsp Whole Wheat Pastry Flour
- 1/4 tsp Paprika
- 1/4 tsp Onion Powder
- Salt and Pepper
Heat a griddle to medium heat and drizzle with oil or spray with cooking spray. Cook the burgers on each side until crispy and golden. About 3-5 minutes.
Introduce the veggies to your food processor…
Add the remaining ingredients and form into patties.
Top with more cheddar cheese, BBQ sauce, red onion, lettuce or whatever you like!
