Chickpea Burger

Burgers, burgers, burgers!  Who doesn’t love a nice, thick, juicy burger?  Okay, maybe vegetarians, vegans, heart patients, people with high cholesterol, and people trying to find their waist line.  Regardless of your situation, personal preference, political stance and morals, I think we can all agree that a good burger brings on smiles and smiles are good, good, good!  Whether you are anti-meat or pro-beef, you are going to love this burger recipe!

BBQ Chickpea Burgers

Inspired by How Sweet It Is

  • 1/4 cup Red Onion, chopped
  • 1 Small Bunch of Broccoli, chopped about 1/2 cup
  • 2 Small Carrots, chopped
  • 1/2 tsp Olive Oil
  • 2 cups Chickpeas
  • 1/2 cup Cheddar Cheese, grated (this is optional if you want to make this Vegan)
  • 2 Tbsp BBQ Sauce
  • 1 tsp Honey
  • 2-3 Tbsp Whole Wheat Pastry Flour
  • 1/4 tsp Paprika
  • 1/4 tsp Onion Powder
  • Salt and Pepper
Saute the onion in a small skillet until caramelized and tender, about 8 minutes.  Meanwhile process the broccoli and carrot in a food processor until chopped finely.  Add remaining ingredients including the sauteed onions and process until combined but not pureed completely.  Form the chickpea goodness into burger patties – 4 – 6 depending on how large you want them.  Transfer to a plate and allow to sit in the fridge for at least 30 minutes to make sure they keep their shape while cooking.  

Heat a griddle to medium heat and drizzle with oil or spray with cooking spray.  Cook the burgers on each side until crispy and golden.  About 3-5 minutes.

Sizzle, sizzle red onion…

Introduce the veggies to your food processor…

Add the remaining ingredients and form into patties.

Griddle time.

Munchy time!

Top with more cheddar cheese, BBQ sauce, red onion, lettuce or whatever you like!
