Jicama Salsa

Jicama salsa.  Look at my salsa, Jicama salsa!  No seriously, look at my salsa!  There’s jicama in it!  Jicama, jicama, jicama!  I’m all about it, I like to say it and I like to eat it!  What’s jicama? It’s a fantastic root veggie from South America.  Actually some claim that it’s a legume.  Works for me!

The next time you are at the store or farmer’s market see if you can find a jicama.  You’re going to love this little guy!  You can eat it raw – slice it up and serve with carrots and peppers.  Add it to salads for some crunch.  Top your tacos with jicama or add it to salsa!

Jicama Salsa

  • 2 Tomatoes, chopped
  • 1 Jicima, peeled and diced
  • 2 Cloves Garlic, minced
  • 2 Limes, juiced
  • 1/2 Cup Corn Kernels (frozen or fresh)
  • Fresh Cilantro, a handful torn or roughly chopped
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Paprika

Chop the veggies, juice the lime and stir everything all together.

Boom! Salsa!

  2. I was just explaining what jicama was to someone and said it was like apple, but with less taste. :) I love the crunch it has though. It’s the perfect addition to salsa! Great idea.

  3. Oh I love jicama and I don’t see many recipes that make it one of the primary ingredients. This is a great salsa recipe! Very unique and tasty!
