This summer has been crazy!! We have been so busy I can hardly stand it! In fact we have only been at our home by ourselves one weekend in the past 3 months! Yikes! I am so thankful that Miss Ava is such a trooper and ready to hit the road with us. Recently we returned home from a 7-hour car ride, and we all felt like we just needed to eat some vegetables. Have you ever had that feeling?
You know, you’ve been eating out, having a few beverages, a little too much chocolate and not nearly enough veggies. Well, we fell into that category last weekend. I had zero time to make a big fun dinner, so this is what happened.
Awesome grocery store – check.
Rotisserie chicken – check.
Produce aisle – check.
Chopped Chicken Spinach Salad
- A bag of Baby Spinach
- 1 Avocado
- 2 Carrots, diced
- 1 Red Bell Pepper, diced
- Feta Cheese
- Rotisserie Chicken, chopped
- Pecans, chopped
- Feta Cheese, crumbled
- Dressing of your choice
Simply chop the veggies and the chicken, put it on a plate and add the cheese. Then top with the dressing of your choice. A balsamic and extra virgin olive oil would be nice. Or if you have a few minutes you could whip up a little Dijon vinaigrette by combining Dijon mustard with a tiny drizzle of olive oil and white wine vinegar. Dinner is served!
