Have you heard about Banana Ice Cream? aka Banana Soft Serve, aka blended frozen bananas, aka THE HEALTHIEST ICE CREAM EVER! Okay, so I thought everyone knew about this. But recently I was talking with a group of people about banana ice cream and I got that look. You know that what-on-earth-are-you-rambling-about-look? Well, the message needs to get out there! Spread the word! This is one of my favorite treats. It’s incredibly easy, cheap and super healthy! No dairy, no sugar, no complaining, just good ole wholesome bananas….and maybe a few other add-ins for an extra kick!
Have you ever bought a bunch of bananas, brought them home only to have them turn brown too quickly? Or maybe your toddler decided to peel all the bananas…very helpful! Okay, not really, but don’t fuss and there are plenty of other options than just banana bread. I promise you are going to love this!!
Peanut Butter Banana “Ice Cream”
- 2 Bananas, peeled, chopped and frozen
- 1 Tbsp Creamy Peanut Butter
- Sprinkle of mini chocolate chips
Blend the frozen bananas in a food processor until creamy. Add the peanut butter and pulse until combined. Serve.
Peel the bananas, roughly chop and freeze. I’m anti-plastic so I prefer to freeze in glass containers with snap on lids.
Toss the banana chunks in a food processor or blender.
Blend until smooth. This is actually ready to go at this point. But I love the addition of peanut butter. You could add a dash of cocoa, too.
Add peanut butter and blend again.
Look at that!!!! Are you kidding me! That looks like the real-deal ice cream! Right!?!
Serve it up and enjoy! I dare you to sneak this into an ice cream lover’s dish and see what they think. Let me know!
Top with mini chocolate chips or nuts or sliced strawberries.
