Earlier this week I told you about a dear family member who was just diagnosed with cancer. Upon hearing this news I knew I had to send a care package. But what to send? A hat? A card? Fuzzy socks? No, none of this will do. It must be chocolate and it must be over the top!
Take a look at this recipe I just posted. If you missed these mini Chocolate Bourbon Pecan Pies you will be very sorry! Again, I must warn you that the recipe you are about to see is in no way, shape or form healthy! Unless you are about to fight cancer, you will need to do an extra workout after eating these!
Recipe Inspiration: Sugar Plum
Chocolate Bourbon Pecan Cookies
- 1 1/2 cups Pecans, toasted and chopped
- 3/4 cup Butter
- 3/4 cup + 1/2 cup Chocolate Chips
- 1 cup Sugar
- 2 Eggs
- 3 Tbsp Bourbon
- 1 tsp Vanilla Extract
- 1/3 cup Unsweetened Cocoa Powder
- 1 1/2 tsp Baking Soda
- 2 cups All Purpose Flour
Preheat the oven to 350 degrees.
Toast the pecans by placing them on a cookie sheet and bake for about 10 minutes. They will smell incredible! Chop.
In a small saucepan, melt the butter until it becomes frothy. Remove from heat and stir in 3/4 cup chocolate chips. Stir until melted and combined. Once cooled slightly transfer to a large mixing bowl. Add sugar and eggs and mix for 2-3 minutes. Add the bourbon, vanilla, cocoa powder and baking soda. Beat in the flour, pecans and 1/2 cup chocolate chips. Drop tablespoon sized balls of dough onto a cookie sheet and bake for 8-10 minutes. Transfer to a wire rack to cool.
Toasted pecans smell and taste incredible. This process allows for a much more flavorful cookie.
