What do you do when you go to your Mom’s house? Do you open the refrigerator, hungry or not, just to see what goodies await you? Well, I do. The last time I was at my Mom’s house, I was beyond excited to see fresh figs in the fridge! I live in Small Town, USA and it’s pretty hard to find fresh figs around here. So the sight of fresh figs really is exciting. Alright, no one else was as excited as I was but that’s okay!
I had been wanting to test out some cashew cream recipes and the fresh figs were the perfect accompaniment to the cashew cream. Oh and this little sweet treat was perfect for the vegans at the table.
Cashew Cream with Fresh Figs and Chocolate -Vegan
- 1 1/2 cups Raw Cashews
- 3/4 cup Water (might need to add an extra tablespoon or 2)
- 1 tsp Vanilla Extract
- 1/3 cup Agave Syrup or Honey
- 1 Tbsp Coconut Oil
- 10 Figs, cut in half
- Dark Chocolate, shaved
Place cashews in a bowl and cover with water. Allow to soak overnight or at least 6 hours. Strain the cashews and place in a blender or food processor. Add the 3/4 cup water, vanilla, agave and coconut oil. Blend on high until completely smooth. This might take a couple minutes. Taste for sweetness and maybe salt. Toast the figs in an ungreased saute pan for about 4 minutes. Spread the cashew cream onto a serving platter, top with the figs and sprinkle on the shaved dark chocolate.
Cover with water and get ready for the magic.

Toast the figs in a dry pan for a few minutes.
Spread the cashew cream on a serving platter.
Top with the warm toasted figs.
Get a bar of chocolate and a vegetable peeler. I’m sure there is a fancy tool for this but a vegetable peeler works great and makes the chocolate curl up.
Shave the chocolate over the figs and cashew cream.
Yep, that’s incredible! It’s really so simple, so fresh and it disappeared in a matter of minutes!
