Cauliflower Cream Sauce

I am so excited about the recipe today!!!  It’s fantastic!!!

By the way, fantastic is Ava’s new favorite word.  Everything is FANTASTIC!

Okay, back to the recipe…Cauliflower Cream Sauce!!!!!  Yes, it really does require that many exclamation points!  This is like a creamy alfredo sauce but instead of fatty-pants, artery-clogging, heavy-cream, milk-and-butter, this sauce is full of veggies that are perfect for the picky eaters in your life!

Cauliflower Cream Sauce

  • 1 Head of Cauliflower
  • 1 Onion, chopped
  • 3-4 Cloves Garlic, minced
  • 2-3 cups of Vegetable Stock
  • 1/3 cup Cream
  • Fresh Grated Nutmeg
  • Salt and Pepper
  • 1/2 cup Parmesan Cheese
Wash and chop the cauliflower into equal size chunks.  In a large deep pan (like a dutch oven) heat a dash of oil and saute the onion for for 5-10 minutes.  Add the garlic and saute 1 more minute.  Add the cauliflower and enough vegetable stock to cover all the cauliflower (2-3 cups depending on the size of the head of cauliflower).  Bring to a simmer and cook until the cauliflower is soft.  Blend with an immersion blender until creamy.  Add the cream and blend again.  Stir in the nutmeg, salt, pepper and Parmesan cheese.  Serve.  
And now you are ready to use this recipe as you would any other cream sauce.  Pour over pasta, pizza and chicken, oh my!  Stay tuned for some great recipes coming up this week that feature this awesome Cauliflower Cream Sauce!  

 

Saute the onion and garlic.

Add the cauliflower and veggie broth.

Bring on the immersion blender.  If you don’t have an immersion blender, you can transfer this to a food processor or stand blender.  Might have to work in batches.

Blend until nice and smooth.

Add a bit of cream,  the seasonings and cheese to kick up the flavor.

You are ready to serve your picky eaters a mighty fine cream sauce!!
