Did you see my new favorite recipe that I posted earlier this week? Cauliflower Cream Sauce. I’m a bit obsessed! Today I’m going to show you a very simple way to serve a healthy pasta dish with the Cauliflower Cream Sauce.
Tortellini with Broccoli, Sun Dried Tomatoes and Cauliflower Cream Sauce
- 1-2 cups Broccoli, chopped into small bite size pieces
- Cheese Tortellini
- 1/2 cup Sun Dried Tomatoes, chopped
- 2 cups Baby Kale
- 1-2 cups Cauliflower Cream Sauce
- Salt and Pepper to taste
Steam the broccoli until tender. Cook the tortellini according to package directions and in the last minute add the baby kale and allow it to wilt. Drain and stir together with the broccoli, sun dried tomatoes and Cauliflower Cream Sauce.
I love these giant pasta pots with the steamer baskets on top. So helpful and easy to add freshly steamed veggies to pasta dishes.
Once the broccoli is tender, transfer to a bowl and add the sun dried tomatoes.
Cook the tortellini, and in the last minute or 2, add the baby kale.
Drain the pasta and kale.
Stir together with the broccoli, sun dried tomatoes and the cauliflower cream sauce.
Dinner is served!
