Chilled Grapes Wrapped in Goat Cheese and Crushed Pistachios

Earlier this summer I joined my Sister-in-Law for a crazy fun weekend in Chicago.  While there, we went to Rocket Bar and had the most amazing appetizer.  Grapenuts!

No, I’m not talking about the cereal.

I’m talking about chilled grapes wrapped in goat cheese and then rolled in crushed pistachios!  WHAT!?!

Oh, my friends, you need this in your life!

Trust me!

Grapenuts

  • Green Grapes, washed and chilled
  • 3 oz. Goat Cheese
  • 1/2 cup Pistachios, crushed

Wash and thoroughly dry the grapes.  Place about 2 teaspoons worth of goat cheese in the palm of your hand and then start to wrap it around the grapes.  The warmth from your hands will allow the cheese to start to form around the grape.  You can almost roll it in between your hands.  Then roll the goat cheese covered grape in the crushed pistachios.  Return the grapes to the fridge to allow to chill for at least 30 minutes before serving.

Form the goat cheese around the grapes.  The heat from your hands will make this pretty easy.  If only my Go Go Gadget 3rd arm would have been working, I could have taken a picture of this step for you.

Roll the goat cheese covered grapes in the pistachios.

Awwww….isn’t he cute!

Introduce the grapes to a dish and allow them to chill for at least 30 minutes before serving.  This isn’t absolutely necessary but it will give the goat cheese a chance to firm up again.

Tada!

  1. Nicely done, Whitney! Too cool that we did this very same recipe. I really like the look of them with bigger chunks of pistachios. I bet that extra crunch is really nice.
