Pumpkin Cupcakes with Pumpkin Frosting

Those of you that know me or follow along with my recipes know that I really like healthy food.  I mean I actually enjoy it!  Love the way it makes me feel, allows me to button my pants and gives me the energy to chase after Miss Ava.  Those of you that REALLY know me also know that I thoroughly enjoy breaking the rules! Today I’m breaking the rules!  Say Hello to this little cupcake!

 

It’s not very often that I have a recipe that starts out with 1/2 cup of butter and 1/3 cup of sugar!  Well, sometimes these things happen.  This recipe is kinda sorta healthy-ish…but, alright, there’s a 1/2 cup of butter so it’s a bit of an artery-clogger but, hey – there are fruits and veggies baked within these little goodies!

Pumpkin Cupcakes

  • 1/2 cup Butter
  • 1/3 cup Brown Sugar
  • 1 Egg
  • 1 tsp. Vanilla
  • 1/2 cup Pumpkin Puree
  • 1 Banana, mashed
  • 1 1/4 cup Whole Wheat Pastry Flour
  • 1/2 cup All Purpose Flour
  • 1/4 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1 tsp Pumpkin Pie Spice
  • 1/4 tsp Cinnamon
  • Fresh Grated Nutmeg
  • 1/4 cup Milk

Preheat the oven to 350 degrees.  Cream together the butter and the sugar.  Add the vanilla and egg and blend.  Stir in the pumpkin and mashed banana.  Add the flour, baking soda, baking powder and spices.  Stir in the milk and mix until creamy.  Fill muffin tins with baking cups and fill about 3/4 full with the batter.  Bake for 18-22 minutes.

Pumpkin Frosting

  • 8 oz Cream Cheese
  • 5 Tbsp Brown Sugar
  • 1/2 cup Pumpkin Puree
  • 1 tsp Vanilla Extract
  • 1 tsp Pumpkin Pie Spice
  • 1 tsp Cinnamon

Combine all ingredients with an electric mixer.  Frost the cupcakes.  I put the frosting in the fridge while I waited for the cupcakes to cool.  This allowed the frosting to firm up before I piped it onto the cupcakes using a frosting bag.

 

I like to combine the dry ingredients together before adding to the batter.

 Batter should look nice and creamy.

Transfer to muffins tin.  I like to use a small scoop so that all the cupcakes are the same size.
