Goat Cheese Mashed Sweet Potatoes

Tis the season to put root vegetables in every single meal.  The term “Root Vegetable” seems so boring and bland.  Today I’m kicking up some sweet potatoes with one of my all time favorite things…Goat Cheese!  YES!!!

Goat Cheese Mashed Sweet Potaotes

  •  2 Large Sweet Potatoes, peeled and chopped
  • 1/4 cup Half and Half
  • 2 Tbsp Butter
  • 2 oz. Goat Cheese plus extra for garnish
  • Pistachios for garnish
Cover the potatoes with water and simmer until tender.  Heat the butter and half and half in a glass dish in the microwave or in a pot on the cooktop.  Mix into potatoes and mash.  Stir in the goat cheese.  Top with more crumbled goat cheese and some pistachios.  

Chop the potatoes into equalish size pieces and cook until tender.

 Drain the water and return the potatoes to the hot pan, I feel like this helps keep them warm.  Then pour in the buttery goodness!

Whip it…and Whip it good!  Oddly enough, I don’t own a potato masher so I opt for a handheld mixer for this job.

Uh-huh, that’s what I’m talking about!  Goat Cheese Sweet Potatoes!  Stir it all up and serve.

Top it off with some pistachios and more goat cheese.
