Roasted Garlic Protein Cauliflower Mash

My recipe today is CRAZY easy!  Seriously simple and really healthy!!!  It might sound a little weird but it’s delicious!  Let’s talk about it a second.  Roasted garlic = yum.  Cauliflower = yay vegetables.  Protein = yes please.  Here it is, Roasted Garlic Cauliflower Protein Mash.

Roasted Garlic Protein Cauliflower Mash

  • 1 head of Cauliflower, chopped and cleaned
  • 1 Can Cannelloni or Great Northern Beans, rinsed and drained
  • 2-3 Cloves of Garlic (depending on how strong you want the garlic flavor to be)
  • Salt and Pepper, if desired

Steam the cauliflower, I prefer doing this on the stove-top with a stainless steel steamer basket in a large sauce-pot with water.  Meanwhile, roast the cloves of garlic.  Place the un-peeled garlic cloves on a pan and drizzle with olive oil.  Roast in a 350 degree preheated oven for about 20 minutes.  Remove and allow to cool before peeling.

Once the cauliflower is steamed, transfer it to a food processor and add the beans.  Pulse until smooth, then add the peeled garlic.  Pulse again until smooth.  Add salt and pepper to taste.   

Add steamed cauliflower to a food processor.

Add the beans.

Puree until smooth and combined.

Add the roasted garlic and puree until smooth.

This is a really easy and super healthy side dish.

    Incredible! New favorite dish, hands down. I accidentally roasted the garlic for too long and it was crunchy and brown on the outside but it gave this nutty texture to the mashed potatoes with little bursts of garlic flavor.
