Alright, if you haven’t noticed by now….I REALLY like cookies! BUT I also prefer to keep my heart pumping properly and minimize the growth rate of my bum. You know what I’m saying!?! Today I have a recipe for some delicious and healthy cookies that sneak in some veggies. This recipe is perfect for the wee ones in your life!
These cookies are so healthy and good for you that you could even enjoy these as a breakfast cookie! Seriously! No sugar, loaded with good carbs and a touch of protein. What’s not to love!
Sneaky Carrot Cookies
- 2 Bananas
- 3 Tbsp Almond Butter (or peanut butter)
- 1/2 cup Applesauce
- 2 cups Oats
- 1 tsp Vanilla Extract
- 1/2 cup Grated Carrots
- 1/3 cup Dried Cranberries (or your favorite dried fruit)
- 1/3 cup mini chocolate chips (optional but really, when is chocolate optional)
- 1 Tbsp Chia Seeds (optional but these are so good for you)
Preheat the oven to 350 degrees. Mash the bananas in a mixing bowl. Stir in the almond butter and then the applesauce. Add the remaining ingredients and stir to combine. Drop the dough onto a cookie sheet and slightly flatten with the back of a spatula. Bake for 10-14 minutes, until nice and firm.
