Mini Banana Nut Muffins

Recently, Miss Ava and I hosted a playdate at the house.  I always love to cook for people, especially when they are in my home.  And when little kids are involved…snack time is never far away.  So Ava and I whipped up these adorable mini banana nut muffins.

Mini Banana Nut Muffins

  • 1 Banana
  • 1 Egg White
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Butter or Coconut Oil
  • 2 Tbsp Milk
  • 1/2 cup Whole Wheat Flour
  • 2 Tbsp Walnuts, chopped
  • 1 tsp Cinnamon
  • 1/2 tsp Fresh Grated Nutmeg
  • 1/2 tsp Baking Powder

Preheat oven to 350 degrees and line a mini muffin pan with paper or grease lightly.  Mash the banana and stir in the brown sugar.  Add the remaining ingredients.  Fill the mini muffin tins half full and bake for about 8 minutes.

Find an adorable little kid to help you mash the banana.

Let her mix in the brown sugar and then the remaining ingredients.

Bake and allow to cool in the pan for just a minute.  Then transfer to a wire rack to cool completely.
