Do you like cookie dough? Yeah, you do! Come on, admit it! You’re making a batch of cookies, and you can’t resist the urge to have a little taste….or maybe a few spoonfuls! My Grandma used to somehow always have fresh baked cookies every time we showed up at her house. Why? Because she would make up batches of cookie dough, form them into balls and then freeze them. Once we all realized there were cookie dough balls in the freezer, we started heading for the freezer instead of the oven!
I know that’s really healthy, huh! Raw eggs, butter and sugar, sugar, sugar – but it was the 80′s; things were strange back then! My recipe today is MUCH better for you and I know that it would make my Grandma proud to know that cookie dough balls continue!!!
The base of this recipe starts out with oats and cashews. I mean, come on! Can we get any healthier than that!?!
Cashew Cookie Dough Balls
- 1/3 cup Oats
- 2/3 cup Raw Cashews
- 3 Tbsp Agave (you can also use maple syrup)
- 1 tsp Vanilla Extract
- 1/4 cup Chocolate Chips (I prefer the mini chips)
Blend the oats and cashews in a blender until powdery. Blend in the agave and vanilla. The mixture should now be more smooth. Stir in the chocolate chips with a spatula. Form into balls and enjoy!
This recipe doesn’t make a lot, especially if you are taste-testing as you form them into balls. You can serve right away or let them set up a bit in the fridge.
Cashews in a blender. See, you can handle this, people!
Blend until a fine powder is formed. But don’t over-mix and turn it into cashew butter.
Add the wet ingredients.
Then stir in the chocolate chips! yummmm, look at that! You could stop right here, call a friend and get a couple of spoons out and devour this right away!
OR form them into cookie dough balls and store in the fridge.
