Black Bean and Roasted Veggie Tacos

It’s back to school season.  For some people that means hurry, hurry, hurry, rush, rush, rush!  With all the chaos that is this time of year, it’s easy to forget about dinner!

Right?  Tell me I’m not the only one!

Here is a simple yet seriously healthy dinner that is perfect for those busy weeknights!

 

Black Bean and Roasted Veggie Tacos

  • 1 Sweet Potato, chopped
  • 1 Red Bell Pepper, chopped
  • 1/4 – 3/4 tsp Chili Powder
  • Salt and Pepper
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 can Black Beans, rinsed and drained
  • 1/2 cup Frozen Corn
  • 1 Avocado, sliced
  • 1 Lime
  • Fresh Cilantro
  • Tortillas

Preheat the oven 425 degrees.  Place the sweet potato and pepper on a roasting pan, drizzle with olive oil and season with chili powder, salt and pepper.  Roast for 20-25 minutes.  Stirring occasionally until tender.  Add the black beans and corn to the pan, stir and return to the oven for another minute or two.  Serve in warm tortillas with sliced avocado, fresh squeezed lime juice and fresh cilantro.

Roast the veggies.

Add the black beans and corn.

Put it in a tortilla and add your favorite toppings!
