Now that I have entered the world of Mother with two children, my life is much more crazy, busy, sticky, smelly and blessed. It leaves me exhausted and hungry! Lately I’ve been making lots of little snacky-snacks that I can grab and get a kick of protein and energy. It needs to be easy and it needs to be healthy. Oh, and having chocolate is a definite plus! Take a look at these Chocolate Peanut Butter Balls.
No-Bake Chocolate Peanut Butter Balls
- 1/4 cup Sliced Almonds, chopped or crushed
- 1/4 cup Ground Flaxseeds
- 1 cup Rolled Oats
- 2 Tbsp Chia Seeds
- 1 1/2 Tbsp Cocoa Powder
- 1/4 cup + 2 Tbsp Creamy Peanut Butter
- 1/4 cup + 1 Tbsp Honey
- 1/4 tsp Vanilla Extract
- 3-4 Tbsp Mini Chocolate Chips
Combine the dry ingredients (except the chocolate chips) in a large bowl. Melt the peanut butter, honey and vanilla in a small sauce pan over low heat. You could do this in the microwave as well, but I prefer the cook-top. Allow to cool slightly then pour the peanut butter mixture over the dry ingredients. Stir to combine. Fold in the chocolate chips. Roll into balls and enjoy! Store in an air tight container in the fridge.
Combine the peanut butter, honey and vanilla.
Add the melted peanut butter mixture.
Stir to combine. YUM!
Form into little balls and enjoy!!
