Let’s talk about dates for a minute. I wish I was talking about date night with my hubby huberton, but I’m not…okay, back to dates. These little guys are awesome! I personally LOVE the flavor and the texture of dates. Dates are sweet, actually very sweet. The sugar content is through the roof! But hold the phone, don’t run away! Not all sugar is created equal, especially considering that some sugar literally is created in a lab. Your body will use all the good sugars you get from eating dates plus the fiber content is awesome, too. Pair dates with another powerhouse food, almonds, and you are going to have an awesome energy snack. Perfect for 3:32 pm pick-me-up!
Energy Date Bars
- 1 cup Raw Almonds
- 1 cup Whole, Pitted Dates
- 1 cup Raisins (or dried cranberries, cherries…get creative)
Combine everything in a food processor and pulse a few times to break down the large pieces. Then process for 1-2 minutes until the ingredients start to clump together. Scrape out of food processor and form into a thick square. Cover and refrigerate for at least an hour. Divide into bars and store in the fridge.
