SLOW DOWN!!!! Time is going too fast! I remember being in the 3rd grade watching the clock tick tock, tick tock, tick tock. It seemed like an eternity until recess! My Mom said ”the older you get the faster time will go.” It’s so true! I can’t believe it’s almost Thanksgiving! And I’ve hardly had any pumpkin yet this Fall! My husband, not a pumpkin lover, would beg to differ. Well, there is still time for some great pumpkin dishes to be enjoyed! Sorry, honey! Today I’ve got a great sweet treat! Pumpkin Spice Ice Cream that is ready in just a few minutes! Oh and it’s dairy free for all of you that don’t play well with with milk products. And it’s pretty much fat free. So go ahead, overdo it on this ice cream!
Pumpkin Spice Ice Cream (Dairy Free)
- 1 1/2 Large Bananas, frozen
- 1/4 cup Pumpkin Puree
- 1/8 – 1/4 tsp Pumpkin Pie Spice
Simply blend all the ingredients in a food processor or a high quality blender. If you happen to have a Yonanas maker you can put the bananas through the machine and then stir together the spice and pumpkin. Serve and enjoy!!!!
In case you are feeling like you really need to indulge, you could whip up some Gingersnap cookies and make a pumpkin ice cream sandwich!
I just had that feeling…like that needed to happen! And so it did!
