Pumpkin Banana Muffins – Vegan

On Saturday our entire family slept in until 8:00 am!!!  If you have small children, then you know this is quite an accomplishment.  Miss Mya and I were up for a few short minutes at 5:00 am, but I’m still calling this a success!  Well, the whole house was chilly, and it just seemed right to turn the oven on to bake something.  Since it’s Fall I decided on some pumpkin muffins.

No-Bake Chocolate Peanut Butter Balls

Pan Bagnat (but not really)

I have to tell you about a sandwich that Miss Ava and my husband recently made.  It’s kind of, sort of, but not completely a pan bagnat.  Basically it’s a French sandwich meaning bathed bread.  It’s most commonly served with tuna and raw veggies and then pressed by tightly wrapping the sandwich.  Our version is a little bit similar but also completely different.  Check it out!

The Healthiest Cookie Dough EVER!

Do you like cookie dough?  Yeah, you do!  Come on, admit it!  You’re making a batch of cookies, and you can’t resist the urge to have a little taste….or maybe a few spoonfuls!  My Grandma used to somehow always have fresh baked cookies every time we showed up at her house.  Why? Because she would make up batches of cookie dough, form them into balls and then freeze them.  Once we all realized there were cookie dough balls in the freezer, we started heading for the freezer instead of the oven!

I know that’s really healthy, huh!  Raw eggs, butter and sugar, sugar, sugar – but it was the 80′s; things were strange back then!  My recipe today is MUCH better for you and I know that it would make my Grandma proud to know that cookie dough balls continue!!!
