Have you ever made a cookie in a waffle iron? Well, I had never tried this. Several years ago we visited family in North Dakota. I had the most delicious cookies up there. I asked for the recipe and OH MY!!!! No wonder it was so delicious!! Ever since I’ve always wanted to make cookies in a waffle iron but maybe just a bit more healthy.

Hi Friends! Today I’m talking about cookies. These cookies are kinda sorta on the healthy side based on the saturated fat content. Only 2 tbsp of butter. BUT lets be honest here – these cookies have a good dose of sugar. The other day I was having a major craving for oatmeal cookies and these hit the spot perfectly! Super easy to make and delicious!

Hello, Hello, Hello!!!! I hope you haven’t forgotten about me! I haven’t forgotten about you!!!! There has been a lot happening in my world lately. Did you hear about my big announcement?!?! YEP! It’s true. Oh, the wonders of pregnancy….and oh, the wonders of the foods that are appealing to pregnant ladies. For example, yesterday I REALLY wanted to have broccoli slaw for breakfast. At the start of this pregnancy, ALL I wanted to eat was meat and oats!! Errr…record scratch….what? Yes this chick, that has yet to post a single recipe for red meat, has been craving meat!!! Well, I’m not going to share one of those recipes today. Today is an oatmeal waffle day.

Let’s talk about Christmas for a moment. Miss Ava was fortunate enough to receive an incredible amount of gifts. And when I say incredible….I mean we had to get another suitcase to fit everything, and that was at our first Christmas celebration of the season. Of course, there were multiple Christmas celebrations with all the family and friends all over the country.

My recipe today is CRAZY easy! Seriously simple and really healthy!!! It might sound a little weird but it’s delicious! Let’s talk about it a second. Roasted garlic = yum. Cauliflower = yay vegetables. Protein = yes please. Here it is, Roasted Garlic Cauliflower Protein Mash.

Miss Ava had her Pre-school Christmas Party and I got to bring the treats! I can’t tell you how exciting that is for me! I knew I wanted something that involved a fruit or a vegetable and cute for Christmas. So thanks to Pinterest, Strawberry Santa Hats it is! And they were a hit with the kids!

Okay, I think I might be the only food blogger on the planet that is not bombarding you with cutesy Christmas food, gift ideas and crafts. Bummer, huh! Life has taken over. BUT, the other day Miss Ava and I spent a little quality time in the kitchen and made some incredible cupcakes! And I mean incredible! Prepare yourself!

Okay, it’s been a REALLY long time since I entered a new post! There has been a LOT happening lately! Heart surgeries, hospital stays, sick baby, travel, shopping and some other HUGE news that I will share with you all soon!!!!! In the meantime, I’m going to share some great pictures!
